Preparation begins several weeks before harvest. First, the tea plants are covered to protect them from the sun. This process creates amino acids in the tea, which make it sweeter. After harvesting, the leaves are dried on a flat surface. Stems and veins are removed before being ground into a fine, deep green powder known as "matcha."

Ingredients

Origin: Japan.
Application
Add 1/2 teaspoon per cup (approx. 1 gram) to boiling or very hot water and stir.
